Crispy and salty. My favorite combination for a late afternoon snack. Baked kale chips are one of the healthiest options you could reach for when that salty craving comes around. In the past, I would usually turn to whatever I had in the pantry, whether it was a bag of chips or buttery popcorn. I was admittedly skeptical of kale until I tried these chips. Not anymore! This alternative is easy to throw together and is packed full of good things for you.

Ingredients:

  • 1 bunch of kale, washed and dried
  • 2 tbsp olive oil
  • salt to taste

Instructions:

  1. Preheat oven to 300 degrees. Remove the center stems and either tear or cut up the leaves.
  2. Toss the kale and olive oil together in a large bowl; sprinkle with salt. Spread on a baking sheet (or two, depending on the amount of kale). Bake at 300 degrees for 15 minutes or until crisp.
