Ingredients:

Chicken breast 1 lb
Red onion 1/2 cup, sliced
Corn 1 can, drained
Black beans 1 can, rinsed and drained
Cherry tomatoes 1 cup, halved
Avocado 1, diced
Lime juice 2 tbsp
Cilantro 1/4 cup, chopped
Romaine lettuce 1 head
Cheddar cheese 1/2 cup, shredded
Tortillas 4, warmed

Directions:

1. Preheat grill to medium-high heat.

2. Brush chicken breast with olive oil and season with salt and pepper.

3. Grill chicken for 5-6 minutes per side or until cooked through. Let rest for 5 minutes before slicing.
