Ingredients

• 6 large eggs

• 1/4 cup milk

• 1/4 teaspoon salt

• 1/4 teaspoon black pepper

• 2 tablespoons olive oil

• 1 small onion, chopped

• 1 bell pepper, chopped

• 1 zucchini, chopped

• 1/2 cup cherry tomatoes, halved

• 1/2 cup shredded cheddar cheese

• 1 tablespoon chopped fresh parsley (optional)

Instructions

1. Preheat oven to 375°F (190°C).

2. In a large bowl, whisk together the eggs, milk, salt, and black pepper.

3. Heat olive oil in a 10-inch cast-iron skillet over medium-high heat. Add the onion and bell pepper and sauté until softened, about 5 minutes.
