Savory Rosemary Chicken with Garlic Roasted Potatoes and Green Beans
A delicious and healthy meal for any night of the week
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, minced
- 1 pound baby red potatoes, quartered
- 1 pound fresh green beans, trimmed
- Salt and black pepper, to taste
Instructions
- Preheat oven to 400°F.
- Place chicken breasts in a baking dish and drizzle with 1 tablespoon of olive oil.
- Add garlic and rosemary to the baking dish and toss to coat chicken evenly.
- In a separate bowl, toss potatoes and green beans with remaining tablespoon of olive oil and season with salt and black pepper to taste.
- Add potato and green bean mixture to baking dish with chicken and arrange ingredients in an even layer.
- Bake in preheated oven for 35-40 minutes or until chicken is cooked through and potatoes are tender.
- Serve hot and enjoy!
