Ingredients

  • 1 large zucchini, thinly sliced
  • 1 large yellow squash, thinly sliced
  • 1 pint cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1/4 cup fresh basil leaves, chopped
  • 3 tbsp. extra-virgin olive oil
  • 1 tbsp. red wine vinegar
  • 1 tsp. honey
  • Salt and black pepper, to taste

Instructions

  1. In a large bowl, combine the sliced zucchini and yellow squash, cherry tomatoes, red onion, and red bell pepper.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt, and black pepper to make the dressing.
