- 1 tbsp olive oil
- 1 onion, chopped
- 1 red pepper, chopped
- 1 green pepper, chopped
- 6 eggs
- 1/4 cup milk
- 1/2 cup grated cheddar cheese
- 1/4 cup fresh parsley, chopped
- 1/4 tsp salt
- 1/4 tsp black pepper
Preheat your oven to 350°F (180°C). Heat the olive oil in a large oven-safe frying pan over medium heat. Add the onions, red pepper, and green pepper and cook until they’re softened.
In a separate bowl, whisk together the eggs, milk, cheddar cheese, parsley, salt, and black pepper. Pour the egg mixture over the vegetables in the frying pan and stir to combine.
Cook for 3-5 minutes on the stove until the edges begin to set. Transfer the frying pan to the preheated oven and bake for 10-15 minutes until the frittata is set and golden brown on top.
