Ingredients
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cup diced cucumber
- 1 cup sliced bell peppers
- 1 cup sliced carrot
- 1 cup sliced radish
- 1 cup crumbled feta cheese
- 1/2 cup chopped nuts (walnuts, almonds, or pine nuts work well)
- 1/4 cup fresh basil leaves
- 1/4 cup fresh mint leaves
Dressing
- 1/4 cup extra-virgin olive oil
- 3 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, bell peppers, carrot, and radish.
- Add the feta cheese, chopped nuts, basil, and mint to the bowl and toss gently to combine.
- In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, garlic, salt, and pepper until well combined.
- Pour the dressing over the salad and toss gently to coat.
- Divide the salad among four plates and serve immediately.
