Ingredients:

  • 3 large baking potatoes
  • 1/2 cup sour cream
  • 2 Tbsp ranch dressing mix
  • 1 cup shredded cheddar cheese
  • 1/3 cup chopped cooked bacon
  • 1/4 cup butter, melted
  • dried parsley, for garnish

Instructions:

  1. Preheat oven to 400ºF. Bake potatoes for 1 hour, or until tender. Reduce oven temperature to 375ºF.
  2. When cool enough to handle, cut potatoes in half lengthwise. Scoop out the pulp, leaving a thin shell. Set skins aside.
  3. Place potatoes on a baking sheet. Drizzle melted butter over potatoes. Sprinkle with dried parsley, if desired.
  4. Bake at 375ºF for 20 minutes, until heated through.
