Gluten Free Nutella Muffins
Ingredients:
- 3 eggs
- 1/4 cup hazelnut butter (check out Meridian brand available at Holland and Barratt)
- 1/4 cup coconut sugar
- 2 tbsp non dairy milk (I used koko coconut milk)
- 1/4 cup coconut flour
- 2 tbsp cocoa powder
- 1/2 tsp baking powder
Instructions:
- Pre heat the oven to 200c. Mix the eggs, hazelnut butter, milk and coconut sugar together in a bowl. Sift in the coconut flour, cocoa and baking powder. Prepare some muffin liners or use silicone cups. Fill the cups 3/4 full then pop in the oven and bake for 10 – 15 minutes until risen and firm to the touch.
