The Almond Joy chocolate bar made from Hershey’s proved to millions of people what many paleo enthusiasts already know — the blend of almonds and chocolate is pretty much a match made in heaven. Unfortunately, the candy bar version is loaded with junk ingredients which anybody following any type of healthy diet is better off avoiding. It’s for that very reason that I wanted to share this recipe for paleo almond joy balls. Unlike the Hershey’s candy bar, these almond joy balls use all natural healthy ingredients that will give you a boost of energy while still satisfying your sweet tooth.

Ingredients:

  • 2 cups blanched almonds
  • 1 cup pitted fresh dates
  • ½ cup unsweetened finally shredded coconut
  • ¼ cup cacao powder
  • 1 tsp pure vanilla extract
  • 2 tbsp almond milk

Instructions:

  1. Place all the ingredients in a food processor and pulse until combined.
  2. Taste and add more pitted dates if needed.
  3. Roll the mixture into 1-inch balls.
  4. Store in an airtight container in the refrigerator for up to two weeks.
