Delicious and Healthy Quinoa Salad for a Perfect Lunch

Ingredients:

  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 large avocado, diced
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • 2 tbsp olive oil
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions:

  1. Cook quinoa according to package directions. Once cooked, fluff with a fork and let cool.
  2. In a large bowl, combine black beans, red bell pepper, red onion, avocado, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  4. Add cooled quinoa to the bowl with the other ingredients, then pour dressing over everything.
  5. Toss all ingredients together until everything is evenly coated in the dressing.
  6. Serve immediately or refrigerate until ready to serve.
