Delicious and Healthy Quinoa Salad for a Perfect Lunch
Ingredients:
- 1 cup quinoa
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 large avocado, diced
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- 2 tbsp olive oil
- 1 tsp cumin
- Salt and pepper to taste
Instructions:
- Cook quinoa according to package directions. Once cooked, fluff with a fork and let cool.
- In a large bowl, combine black beans, red bell pepper, red onion, avocado, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
- Add cooled quinoa to the bowl with the other ingredients, then pour dressing over everything.
- Toss all ingredients together until everything is evenly coated in the dressing.
- Serve immediately or refrigerate until ready to serve.
