Easy and Delicious Tomato and Mozzarella Panini for a Perfect Lunch

There’s nothing quite like a warm and toasty panini for lunch. This easy recipe combines the classic flavors of tomato and mozzarella for a delicious and satisfying meal. Best of all, it only takes a few minutes to make!

Tomato and Mozzarella Panini

Ingredients

  • 1 ciabatta roll, sliced in half lengthwise
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 medium tomatoes, sliced
  • 4 ounces fresh mozzarella, sliced
  • 1/4 cup fresh basil leaves
  • Salt and pepper, to taste

Instructions

  1. Preheat a panini press or a large skillet.
  2. In a small bowl, mix together the olive oil and garlic.
  3. Brush the cut sides of the ciabatta roll with the garlic oil.
  4. Layer the tomato slices, mozzarella slices, and fresh basil leaves on one half of the roll.
  5. Sprinkle with salt and pepper to taste.
  6. Top with the other half of the roll.
  7. Place the sandwich on the panini press or skillet and press down gently.
  8. Cook until the bread is toasted and the cheese is melted, about 5-7 minutes.
  9. Cut the sandwich in half and serve immediately.
