Ingredients:
- 1 cup of quinoa
- 2 cups of water
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cucumber, peeled and diced
- 1/2 red onion, diced
- 1/4 cup of chopped fresh parsley
- 1/4 cup of chopped fresh mint
- 1/4 cup of olive oil
- 3 tablespoons of fresh lemon juice
- 2 cloves of garlic, minced
- Salt and pepper to taste
Directions:
- Rinse the quinoa under cold water and then place it in a saucepan with the 2 cups of water. Bring it to a boil, then reduce the heat to low and cover the saucepan. Let it simmer for 15-20 minutes, until the quinoa is tender and the water is absorbed.
