Ingredients:

  • Vegetable Oil
  • 2 large eggs
  • 100g plain gluten free flour
  • 100 ml milk, use soya milk for dairy free

Instructions:

  1. Heat your oven to 225°C/440°F/Gas 7
  2. Add all the ingredients into a jug and mix together until you have a smooth batter.
  3. Pour a teaspoon of the oil into the bottom of each hole in a muffin tray.
  4. Place the tray into the oven and leave it for at least 10-15 minutes until the oil is very hot.
  5. Remove the tray from the oven. Keep the oven on with the door shut to maintain the heat.
  6. Quickly pour the mixture evenly into the holes of the muffin tray.
  7. Place into the oven as quickly as possible.
  8. Bake for 20 minutes until risen and golden.
