Ingredients:

  • 2 lb golden Yukon potatoes
  • ⅓ cup extra virgin love oil
  • 6 cloves garlic, peeled and smashed
  • ¼ cup sour cream, optional

Instructions:

  1. Bring a large pot of water to boil and boil the potatoes until very fork tender.
  2. While the potatoes are cooking, add the olive oil to a medium pot and heat on medium-high heat. Add the smashed garlic cloves and cook for 5 minutes, being careful not to burn the garlic. Set aside.
  3. Throw the potatoes in a stand mixer and stir till the potatoes are broken up. Stir in the olive oil and season with plenty of salt and pepper. If you'd like an extra tang, stir in the sour cream as well!
