Ingredients:
- 1 onion, diced
- 1 red bell pepper, chopped
- 1 lb. potatoes, chopped
- 4 slices bacon, chopped
- 4 eggs
- Salt and pepper to taste
- 2 tbsp. olive oil
- 1 tsp. smoked paprika
Instructions:
- Preheat oven to 400°F (200°C).
- Place potatoes in a pot of boiling water and cook until tender, about 10 minutes. Drain and set aside.
- Heat olive oil in a skillet over medium-high heat. Add onion, bell pepper, and bacon. Cook until vegetables are soft and bacon is crispy, about 7-10 minutes.
- Add potatoes to the skillet and mix well. Season with smoked paprika, salt, and pepper to taste.
- Using a spoon, make four wells in the mixture. Crack an egg into each well.
- Place skillet in the oven and bake until the eggs are set, about 10-12 minutes.
