Ube Roll Cake
Ube Roll Cake is one of the most popular cakes in the Philippines.
Ingredients:
- 1 cup of cake flour
- 1⁄2 cup of sugar
- 1 – 1 1⁄2 teaspoon of baking powder
- 1⁄4 teaspoon of salt
- 5 large eggs
- 1⁄2 teaspoon of vanilla extract
- 1⁄4 cup of evaporated or fresh milk
- 1 teaspoon of ube flavouring
- 1 teaspoon of liquid purple food coloring
- 2 tablespoons of vegetable oil
- 1 cup of softened butter
- 1 cup of powdered sugar or confectioners sugar
- 2 tablespoons of evaporated milk or fresh milk
- 1 tablespoon of Ube flavoring
- 1⁄4 teaspoon of purple food coloring
- 1⁄2 cup of water
- 3⁄4 cup of sugar
- 2 egg whites
- A pinch of salt
- 12 tablespoons of softened butter
Instructions:
- Combine the evaporated milk, ube flavoring and liquid food coloring in a bowl.
- Mix well then set aside.
- In another bowl add the (room temperature) butter.
- Cream the butter by whipping it with a whisk.
- Once the butter is creamed, add the confectioners sugar.
- Mix the confectioners sugar and butter together until the confectioners sugar is dissolved and smooth.
- Then gradually add the liquid mixture to the butter mixture while continuing to stir until the frosting is smooth and well blended.
- In a mixing bowl, beat the egg whites with a whisk until frothy.
- Add the salt and 1 tablespoon of sugar.
- Continue to beat the egg whites until soft peaks form.
- Set aside the egg whites.
- In a sauce pan, combine the water and the remaining sugar.
- Stir until sugar is completely dissolved.
- Now bring the water to a boil over medium heat without stirring it.
- Boil for 3 minutes to make a simple syrup then remove it from the heat.
- Slowly pour the syrup into the egg whites while beating constantly until meringue forms.
- Let the meringue rest until it is cool to the touch.
- Now add softened butter to the meringue 1 tablespoon at a time, beating well after each addition until the mixture is smooth.
- Preheat the oven to 350 degrees Fahrenheit.
- Line a large baking pan with parchment paper.
- Sift the cake flour, baking powder, and salt together into a bowl.
- Mix well then set aside.
- In another bowl combine the milk, vanilla, food coloring, vegetable oil, and ube flavoring.
- Mix well then set aside.
- In a separate bowl, beat the eggs and sugar with a wire whisk until soft peaks form.
- Now gradually add the dry ingredients into the egg and sugar mixture while whipping with the wire whisk until well blended.
- Then add the liquid mixture while continuing to stir until well blended.
- Pour the batter evenly into the prepared pan and smooth the top of the batter with a spatula.
- Bake for 25 minutes or until a toothpick inserted into the batter comes out clean.
- Remove cake from the oven and let it stand for 10 minutes.
- Get a new piece of parchment paper that is slightly bigger than the cake.
- Place the parchment paper on a flat surface then lightly dust the surface with powdered sugar.
- Carefully turn the cake over onto the parchment paper.
- Slowly peel off the parchment paper that the cake was cooked on.
- Now get another piece of parchment paper that is slightly bigger than the cake.
- Lightly dust the top of the cake with powdered sugar then place the second piece of parchment paper on top of the cake.
- Now using the bottom piece of parchment paper, carefully roll the cake into a spiral cylinder shape.
- Set the cake on a cooling rack to rest until it is cool enough to be comfortably handled.
- When the cake has sufficiently cooled, unroll it so that it is flat again and discard the top piece of parchment paper
- Spread the ube filling evenly on top of the cake then use the bottom piece of parchment paper to slowly roll the cake into a spiral cylinder shape again.
- Place the rolled cake on a cake tray.
- Cut off a thin slice from both ends of the cake roll.
- Put the ube buttercream in a piping bag and apply it to the surface of the cake.
- Spread the buttercream frosting over the entire surface of the cake.
- Then decorate as desired; sprinkle with purple-colored sprinkles or top with a cherry.
- Refrigerate before slicing.
- Serve and enjoy!
