Zesty Quinoa Salad
A Healthy and Filling Lunch Option
- 1 cup quinoa
- 2 cups water
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 small red onion, diced
- 1 jalapeño pepper, seeded and minced
- 1/2 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 1/4 cup extra-virgin olive oil
- 1 teaspoon ground cumin
- Salt and pepper, to taste
1. Rinse the quinoa in a fine-mesh strainer and drain well.
2. In a medium saucepan, bring the quinoa and water to a boil over high heat. Reduce the heat to low, cover, and simmer until the quinoa is tender and the water is absorbed, about 15-20 minutes.
3. In a large bowl, combine the cooked quinoa, black beans, red bell pepper, red onion, jalapeño pepper, and cilantro.
4. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper. Pour the dressing over the quinoa mixture and toss to combine.
5. Serve the zesty quinoa salad immediately or refrigerate for up to 3 days.
