Ingredients:

  • 1 large lemon
  • 1 tablespoon olive oil
  • 1 pound thin-sliced skinless, boneless chicken breast halves
  • 1 clove garlic, minced
  • 3/4 cup Unsalted Chicken Stock
  • 1 can Campbell’s® Healthy Request® Condensed Healthy Request® Cream of Celery Soup
  • 4 cups baby spinach

Instructions:

  1. Grate 1 teaspoon zest and squeeze 1/8 cup juice from the lemon.
  2. Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides and cooked through. Remove the chicken from the skillet, cover and keep warm.
  3. Stir the garlic, stock, lemon juice, lemon zest and soup in the skillet. Add the spinach and cook and stir until the spinach is wilted. Return the chicken to the skillet.
